Easy Plant-Based Lasagna

Dairy and gluten tend to bother many with IBD. This lasagna uses lentil flour noodles and almond “ricotta” to avoid those issues. Substitute whatever veggies you like, add organic ground turkey or grass fed beef if you aren’t looking for plant based, and feel free to make your own homemade tomato sauce (I use a good jarred sauce to keep it quick and easy!)

  • Lentil pasta provides a good dose of protein and iron

  • Almonds are a great source of healthy omega 3s and vitamin E

  • Veggies provide an array of vitamins and minerals as well as fiber to support the microbiome.
